Healthy Homemade Chicken Nuggets

“Do you know what my husband says about these chicken nuggets?”

“No,” I replied, glancing up from my plate of food.

We were having a fellowship lunch and I had made homemade chicken nuggets.

“He said MacDonald’s nuggets don’t hold a candle to these.”

“Really! I exclaimed in surprise and delight, for you see, sometimes I still struggle with a lack of confidence in my cooking skills!

To be honest with you, I have never had McNuggets. My first thought was to go buy some just to see what difference there is between theirs and mine! But I have read too much about them already and so wasn’t too enthused about putting them into my body!

For one, they have high fructose corn syrup in them, plus the breading has corn in it, the chickens that the meat comes from are fed corn and then they are cooked in corn oil. (All GMO!) THAT sounds a bit too corny for me!

What I love about making our own, I know what goes into them! Our own pasture-raised chicken, our own butter, and our own wheat for the flour.

Here is the recipe I used:

Homemade Chicken Nuggets

3 med chicken breasts 1 1/2 tsp. salt

1/2 cup melted butter 3 tsp. celery salt

2 1/4 cup flour 3 tsp. garlic pwd.

3 tsp. baking pwd. 3 tsp. pepper

1. Cut chicken pieces into 1-inch square chunks.

2. In a small bowl, mix flour and seasonings thoroughly.

3. Dip each piece in the melted butter and then coat with the seasoned flour.

4. Lay the pieces in a single layer in a baking dish.

5. Bake at 400* for 15 minutes.

6. Enjoy with your favorite sauce!
